Rhubarb finds its way into so many baked goods. It just adds a nice, tart taste to everything. Mom baked with her homegrown rhubarb often, and she never had trouble growing rhubarb. If you want to start your own rhubarb patch, plant the rhubarb one year and then use it the second year. I have always done this and always had good luck. You don’t use the rhubarb for a year so that you can give the plants time to develop strong roots.

• 4:50 a.m. - My husband Joe didn’t have to work today, so we were able to sleep later than usual. I get up as  daughter Elizabeth is awake and packing her lunch for work.

• 5:15 a.m. - Elizabeth leaves for work,  Joe gets up to check on the coal-stove while I fix us a pot of coffee.

• 6 a.m. - I wake up the rest of the children. They want coffee soup for breakfast while they get dressed for school. Seems this hour always goes fast. Usually someone can’t find their shoe or someone else has forgotten to do their homework so that it is rush, rush to get ready for  the bus.  Joe is outside cutting a quarter off  the 1740 pounds of beef we dressed Friday night.

We are having some snowy days this week although there is not much of an accumulation.  We have had quite a day already.  Joe left for work around 3:30 a.m.  I had turned off the light and was ready to go back to bed until 5 a.m.  I heard an alarm go off in the basement so I went to go out and check it out and it was a carbon monoxide alarm. I could smell soot so I checked our coal stove but it looked okay.  I figured that it might be the gas water heater and shut it off.  I get worried more since the fire we had last year and decided to wake all eight children.  I called 911 to ask what I should do.  They said to get everyone out of the house and they  would send someone to take a look.  Everyone was still sleepy and it was difficult to find clothes and coats by flashlight. I didn’t want to turn on our gaslights just to be safe.  Remembering the fire we had everyone was shook up a little more.

The Amish Cook 2-26-13 Print E-mail

The school will have Friday and Monday off for a mid-winter break. Today is Valentine’s Day so the elementary classes are having their party.  Last night Joseph 10, Lovina, 8, and Kevin, 7 signed all their cards to their classmates.  This is Joseph’s last year in elementary school so this is his last Valentine’s party.

We headed out for the two-hour trip to Berne, Indiana on Saturday at around 7:15 a.m. We had set our hired van driver to be here around 6:30 a.m.  He got out of his van and somehow left his keys locked inside. His son brought a spare pair and we were on our way 45 minutes later.  Nine out of the 12 siblings were at Joe’s sister's house for the late family Christmas gathering.  There was more than enough food for the 10:30 a.m. carry-in brunch. Snacks were served later on in the day.  After we left the gathering on Saturday we drove in to the place we used to live before we moved to Michigan almost nine years ago.

My husband Joe has been home the last three days, not having any work. Makes it a little harder on payday but we shouldn’t complain.  God always provides a way if we keep our trust in him. Meanwhile Joe has been kept busy here at home. Yesterday our two oldest girls, Elizabeth and Susan, were working and the six youngest were in school. Joe helped me do the laundry and then we made noodles the rest of the day. It is a good feeling to see a table full of noodles drying.

The darkness of the early morning is leaving and daylight is appearing. We are being greeted by a world of white. It has been snowing all night and several inches are covering the ground.  Snowflakes are still coming down very thick. I love to watch it snow. So many snowflakes and our wonderful God created each one. We are also having wind along with the snow. After a rainy week in January we are happy to see snow again. The children are looking forward to some more sledding. Warm weather and rain we had this week probably ruined the lake for ice fishing. My husband Joe and sons Benjamin and Joseph along with Timothy and Susan’s friend Mose spent last Saturday ice fishing.

Hi, I am Susan, I decided to write for mom this week. My 17th birthday is tomorrow January 24 so my treat to mom is to write the column for her. I made monster cookies yesterday. I wanted to have some to treat everyone for my birthday. I am here at my baby-sitting job. I brought some cookies for them too. The children really like the cookies. I think monster cookies are a treat for the children especially since they have M & Ms in them.

We attended both funerals of my cousins over the weekend.  So nice to see cousins, uncles, aunts, and friends that we don’t often see, but sad for the reason we had to gather. Chris’s funeral was on Saturday at 9 a.m.  Danny’s funeral was at 9 a.m. on Sunday. Both funerals were largely attended. Our sympathy goes to both families.  Such a tragedy and we question “why?”   But let us trust that God makes no mistakes and that it is all for a reason. Someday we will all understand. It does seem to draw everyone closer at times like these thinking what and if it would have been us.  God has not promised us another day so let us all be prepared. Brother Amos was not able to attend Chris’s funeral due to still being very sore. He felt better Sunday morning and attended Danny’s funeral.  All of the co-workers will have a hard time dealing with their emotions through their accident.

3:10 a.m. -   The alarm goes off to start another day here in the Eicher household. It has taken some getting used to, having a scheduled time to get up this week now that everyone is back to school and work. I packed husband Joe’s lunch, which was leftover macaroni and cheese from last night’s supper, an orange, cookies, applesauce, and homemade party mix.  Joe waits to eat something until breakfast break time so I make sure I send plenty along to eat.  I also fill his jug with ice cubes and water.

Amish Cook 1-15-13 Print E-mail

A whole brand new year lies ahead.  What does it have in store for us all?  Only God knows so let us put our trust in Him. I hope everyone had a great, safe holiday. We had a very nice holiday after the flu bug finally left our house.

Christmas Day was  spent here at home. Elizabeth’s friend Timothy and Susan’s friend Mose joined us for the day. It was a memorable day playing games and just being together as a family. Our thoughts and prayers went out to the ones missing family members this holiday season.They are missed even more during the special holiday time.
